After talking with a friend today about making the same recipes for dinner over and over, and she needing new ideas…..I suggested Salmon Cakes. She said, “Well, I don’t like salmon.”
I told her you do not have to “like” salmon to LIKE Salmon Cakes! Really. Please try them. And if you do, leave a comment here telling me how much you LIKED them! Especially you, my friend!
Salmon. Wild. From Alaska. Not like the popular tilapia farmed and raised in other countries which we eat in mass. Wild Salmon is an economical way to eat this fish. One of the, if not the best, most nutritious fish for you. High in Omega 3 Fatty Acids, this low saturated fat fish is such a good source of protein!
Here are the ingredients for this recipe. (I showed 2 different brands of salmon that I have used)
Oh, and I did not a chance to take a picture of the finished product before they were all gobbled up!
Salmon Sand Dollars (Salmon Cakes)
(don’t mind my measurements. it really saves time to not “measure” everything!)
2 cans boneless, skinless canned wild salmon
10 crackers, crumbled, I use whatever I have in my pantry.
(Today, it was Saltines with a hint of Sea Salt)
1 egg, beaten
1/8 c finely diced onion
1/8 c finely diced red pepper
dash of ground red pepper or hot sauce
sprinkle of salt and pepper
Dill weed, lots of sprinkles, make it look speckled green!
sprinkle of garlic powder
Flake-up the salmon with a fork and mix all ingredients well. Form into “patties” or cakes. This recipe makes 6-8 medium size cakes. Cook on a flat frying pan that is lightly covered with canola oil, cook over med. heat until each side turns golden brown.
Serve with your favorite green vegetable (we like broccoli) and a side of fruit.
Oh, and if you don’t have or don’t want to add the red pepper or onion, its not the end of the world, you can still make it…..I have before.
Kids Kitchen Konnection:
My kids like these sand dollars, I mean…cakes. When my son was 3, he would eat 2 at a time….and he was my more “selective” eater at the time. Tonight? Both kiddos ate the salmon cake before the broccoli or yogurt with fruit! It’s an all around winner at our house.
