Friday Food Fact: Quinoa and Recipe for Quinoa Mac-n-Cheese

You may have seen quinoa around and even started cooking with it without really knowing what it is.  Quinoa is a grain-like crop that is grown for its edible seeds. It is considered a pseudocereal rather than a true cereal. It can be used in place of pasta in gluten free dishes or as a source of protein in vegetarian dishes. It is a super-food because it is a whole-grain that is a complete protein, high in calcium, fiber, phosphorus and iron.  Quinoa can easily be substituted into regular dishes instead of pastas or rice to add protein and fiber.

This recipe puts a more nutritious spin for everyone’s favorite mac and cheese.  It would make a great side dish for your family this Thanksgiving!

Easy Quinoa Mac and Cheese

Ingredients
  1. 1 ½ cups quinoa
  2. 2 cloves of minced garlic
  3. 2 large eggs
  4. 1 cup low-fat milk
  5. 1 ½ C grated cheddar cheese
  6. Optional: Try adding a veggie such as broccoli in this dish to make it more nutrient dense.
Instructions
  1. 1. Cook quinoa to packaged instructions until fully cooked (about 15 minutes)
  2. 2. Preheat oven to 350 F. Coat 13 x 9 inch baking dish with oil or butter.
  3. 3. Whisk together eggs and milk in large bowl. Add quinoa, garlic and cheese and mix together. 4. Transfer to prepared baking dish and bake for 30-35 minutes until cheese starts to bubble.
